Mmmm.... Roasted Broccoli

My new favourite way to enjoy broccoli is Roasted Broccoli with Lemon. It is so easy to do and has so much flavour!
  1. Preheat oven to 425 degrees.
  2. Wash and cut broccoli into bite sized pieces.
  3. Pat dry and place on cookie sheet lined with parchment paper. Be sure not to overlap broccoli pieces.
  4. Drizzle or spray with olive oil and sprinkle with salt and pepper.
  5. Bake for 10-15 minutes. Smaller pieces will take less time. The broccoli is done when it`s just starting to brown a bit. Don`t let it get too dark or it may taste bitter.
  6. Remove from oven and sprinkle with fresh lemon juice.
This is a healthy and tasty way to enjoy a very nutritious vegetable!
